Since the Discord is closing soon, I think it would be awesome to have a space on here to talk about Gemini, Gopher, Finger and other protocols that aren't the World Wide Web. I'm very passionate about the spaces outside the web, so it'd be cool to be able to talk about them here.
Is this a thing that can/should be done?

I know that "technically" those spaces are considered outside of the web, but I think topics about these protocols would fit well in either "Net Cafe" or "Webweaving" and not at all be considered off-topic. So don't hesitate to post about them there! I don't think they necessarily warrant their own board. Open to hearing other thoughts though

It sounds like an excellent splinter project for those interested in such technologies to spin up a dedicated forum for such topics.
